Simple Tacos


Serves 4 (one tacos per person)

Cooking time: 20 mins

4 pieces of wholemeal Tortillas (you can find them in your regular supermarket)

Veggie Base for Tacos

  • 1 tbsp vegetable oil
  • 1 cup sliced or chopped mushrooms
  • 1 mini-fillet of Radiant Foods 
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 4 pieces chopped lettuces

Cilantro Cream Sauce

  • 1/2 cup plant-based yoghurt
  • 2 tbsp lime juice
  • 1/4 cup tightly packed, chopped cilantro
  • Sea salt & ground black pepper, to taste

Fresh Tomato Salsa

  • 1 tomato, diced
  • 1/2 lime, juiced
  • 1 tbsp finely chopped cilantro
  • Sea salt & ground black pepper, to taste

Easy Guacamole

  • 1 avocado
  • 1/2 lime, juiced
  • Sea salt & ground black pepper, to taste


Veggie Base

  1. Preheat a large pan over medium and add vegetable oil and mushrooms and sauté for 2 to 3 minutes until soft.
  2. After mushrooms have been cooked for a couple of minutes, chop & add Radiant Foods mini-fillets, cumin, and chilli powder. Stir to combine. Sauté for another 5 to 7 minutes to allow the veggie base to get heated through.

Fresh Tomato Salsa

  1. Combine all the ingredients in a bowl and refrigerate until ready to serve tacos.

Easy Guacamole

  1. Scoop out avocado flesh into a bowl.
  2. Add lime juice and mash with a fork until smooth.
  3. Add sea salt and ground black pepper to taste.
