Ingredients
Serves 4 (one tacos per person)
Cooking time: 20 mins
4 pieces of wholemeal Tortillas (you can find them in your regular supermarket)
Veggie Base for Tacos
- 1 tbsp vegetable oil
- 1 cup sliced or chopped mushrooms
- 1 mini-fillet of Radiant Foods
- 1 tsp ground cumin
- 1 tsp chilli powder
- 4 pieces chopped lettuces
Cilantro Cream Sauce
- 1/2 cup plant-based yoghurt
- 2 tbsp lime juice
- 1/4 cup tightly packed, chopped cilantro
- Sea salt & ground black pepper, to taste
Fresh Tomato Salsa
- 1 tomato, diced
- 1/2 lime, juiced
- 1 tbsp finely chopped cilantro
- Sea salt & ground black pepper, to taste
Easy Guacamole
- 1 avocado
- 1/2 lime, juiced
- Sea salt & ground black pepper, to taste
Method
Veggie Base
- Preheat a large pan over medium and add vegetable oil and mushrooms and sauté for 2 to 3 minutes until soft.
- After mushrooms have been cooked for a couple of minutes, chop & add Radiant Foods mini-fillets, cumin, and chilli powder. Stir to combine. Sauté for another 5 to 7 minutes to allow the veggie base to get heated through.
Fresh Tomato Salsa
- Combine all the ingredients in a bowl and refrigerate until ready to serve tacos.
Easy Guacamole
- Scoop out avocado flesh into a bowl.
- Add lime juice and mash with a fork until smooth.
- Add sea salt and ground black pepper to taste.
